We have found high quality Madagascar Vanilla Beans which are known for their rich, dark, sweet flavor and aroma and created unique vanilla extracts. We use a cold process to extract the flavor from the beans and allow the beans and the alcohol used in the extraction to age slowly bringing out a rich deep flavor. Our extracts are prepared to give you a natural (no added sugar, water or corn syrup), high quality ingredient for baking, sauces and beverages at a reasonable price.
We then went a step further and found culinary grade organic lavender flowers and used the same process to produce Lavender Extract. Lavender is the perfect ingredient for Italian sauces, salad dressing, beverages, icing or cream for desserts or homemade ice cream! Walk into a home that has just baked cookies or cakes and instantly your mouth waters. One of the basic ingredients in these delightful desserts is vanilla. There are many kinds of vanilla that you can purchase from the local grocery store or WalMart but if you want pure vanilla extract free of sugar or corn syrup you may pay a premium price. You will also find there are many deviations from traditional vanilla extract. So what's the difference?
Imitation vanilla is just that, vanilla flavors and other ingredients that imitate the real thing. Then you enter the world of pure vanilla extracts. Some are enhanced with sugar or honey, some use low quality vanilla beans but all must adhere to one standard, it must be 35% alcohol by volume. Pure vanilla extracts can be pricey but they are worth every penny and the aroma? Heavenly! In addition to traditional vanilla extract you will find that there are extracts made from a variety of vanilla beans and also from a variety of processes. Each type of vanilla bean has it's own unique characteristics. For instance Tahitian vanilla beans have a floral aroma with fruit flavors of cherry and licorice. Mexican vanilla beans have smoky overtones. Ugandan vanilla beans have a very earthy aroma and milk-chocolate overtones.
